This is a take on the Amazing Ribs Corn Bread recipe. It makes a dryish corn bread that is a good balance for saucy BBQ.

    Food Stuffs
  • 1-1/2 cups yellow corn meal
  • 1/2 cups white cornmeal
  • 1/2 cups all purpose flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 4 eggs
  • 3 tlbs honey
  • 3/4 cup sour cream
  • 4 tlbs butter
  • 1/4 cups corn
    Seasonings
  • 1 tsp kosher salt

    Steps for Completion
  1. Preheat the oven to 400°F and put the skillet in the oven.
  2. Mix together the dry ingredients of cornmeal, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, honey, sour cream, and melted butter. Stop and whisk between each ingredients addition.
  4. Add the wet ingredients to the dry and mix until still lumpy. Do not overmix.
  5. Carefully take the hot skillet out of the oven and put some extra butter or other fat to coat the pan. Dump in the batter and level. Put back in the oven. Cook for about 20 minutes or until a knife comes out dry.
